Take note: the pan is NOT NON-STICK. You need to grease and flour the pan evenly and tap out the excess flour. Otherwise, some of the cake will stick to crevices (if it is not greased evenly) or parts of it will look white (if the flour is not spread evenly or there is excess flour). I don't use baking spray, but I think it would work if you use a spray with flour. When the pan is seasoned correctly, the cake just plops out. The pan is very light - that helps when you're working with the heavy cake batter and you have to take out a very hot pan out of the oven. It looks like it could dent easily and my pan already has scratches at the bottom. The pictures make it appear as though it will provide a well definded diamond like pattern, but the pan itself does not provide deep enough pockets to make the cakes look like the pictures. The pan itself is great. Very durable and easy to scrub clean without having to worry about teflon, but if you are ooking for something to make your cakes a little fancier, this is likely not the answer.
