The USA Pans Biscotti Pan is constructed of aluminized steel, the material of choice for commercial bakeries. Biscotti Pan measures 12 x 5.5 x 2 inch. This shallow loaf pan is ideal for shaping and first-baking biscotti. The metal thickness of this pan has been selected to allow for even heat distribution and maximum service life. No need for messy and unhealthy oil and grease. This pan is coated with Americoat. Americoat is a proprietary silicone coating. It provides a clear, non-stick, non-toxic baking surface, specially formulated for superior baking. It's FDA approved; it does not contain PTFE's or PFOA's. It is not recommended to exceed baking temperature of 400 degrees F. Easy care. To clean, simply wipe clean after use; soap and water are okay to use. It is not recommended that pan be washed in dishwasher because harsh chemicals can cause the non-stick material to breakdown in time. Dry pan completely, after cleaning. After an extensive search for a non-stick, sturdy biscotti pan I ordered this pan. I have been very pleased so far.I have tried several recipes and all of them have come out of the pan easily without leaving pieces behind. I wish all of my bakeware released so well. I use a light coat of cooking spray. The pan washes up great in the sink,have not tried it in the dishwasher and probably will not do so,clean up is a snap. The pan does not warp, quite sturdy like the comercial grade chicago metallic pans. I was considering the chicago metallic biscotti pan, but really wanted non-stick. The ribbing in the USA pan helps with heat circulation and to release the biscotti. So far the coating looks durable, using silicone or teflon spatulas I expect this pan to last for many years. I make a quick run around the inside with a spatula, turn the pan upside down and the bisotti pop out in one piece. I bought this for my Mom because she kept saying she needed a new pan to make cornbread in. She LOVES it. Perfect for cornbread! I loved it so much I bought myself one of USA small sheet pans. Talk about high quality!!
They are hefty in weight and things just slide off.
I'm about to start adding more USA pans to my collection. Fantastic quality with great results! Can't say enough good things about USA pans!

So far I haven't had any issues with this pan but I have a 8x8 Americoat had a stainless steel scrubby just sitting in it and the scrubby reacted to the coating and made it turn black. I never scrubbed it the scrubby is there for my frying pan. No chemicals on it either.
Just makes me suspicious of this coating. I was hoping to replace all my pans with the Americoat but not now. I'll just get the Chicago aluminum pans and donate these expensive Americoat pans.
