Parrish Magic Line 10 Inch Aluminum Cheesecake Pans

These pans are great for baking cheesecakes. I have a collection of these, many of which were leftover from making my own wedding cheesecake. I once did a side-by-side comparison, baking one cheesecake in a Magic Line pan and one in a springform pan. The cheesecake baked in a springform pan browned more on the sides and was harder to remove from the pan. The cheesecake baked in a Magic Line pan was prettier and appeared to have baked more evenly (also easier to remove from the pan, just place on a large can and gently pull the pan sides down). So I disposed of my springform pans and came to Amazon to buy more sizes of Magic Line cheesecake pans.

These cheesecake pans do not leak batter out, although it is not safe to bake in a waterbath without wrapping the pan with two layers of foil. I have had water seep in and make my crust soggy when I only used one layer of foil and baked in a water bath. I have successfully baked regular cakes in these pans as well.

I would definately buy this pan again. I was deterred at first by the price of this pan vs. a springform pan, but the more I read about the best pans to use for cheesecakes, the more I wanted the Magic Line pan. I bought it, plus the 9 x 3. The fit of the bottom to the sides of the pan is snug, but easy to remove. I simply ran a knife around the sides, sat the pan on a mug and slid the sides down. Another big plus for me was that the product was USA made. I considered the Fat Daddy line (due to the pans being slightly less expensive), but changed my mind once I found out they are made in China. Another plus for the Magic Line - LIFETIME WARRANTY against warping, etc. I would definately buy this product again and plan to buy other pans in the Magic Line family of products in the future.

Parrish Magic Line 10 x 3 Aluminum Cheesecake pan I have baked deli-style cheesecakes for over thirty years, and this is the BEST pan I have ever used! I've tried springform pans with clamps, ones made with non-stick finishes, tinned metal, glass bottomed, every type, only to have the finish come off, pan rust, or the clamp come undone while the cake is baking! This pan is fail-free; it is incredibly easy to use. Because it is aluminum, you can't use a sharp knife to cut slices, so just use a smooth edge flatware knife. It is truly foolproof and well worth the price!
