The Kaiser Magnum bakeware surface is so named for its long-term scratch and cut resistance. Though nonstick, it is not designed for perfect release. Instead, this pan is meant to be cut into, even with metal utensils, and to resist reaction to acidic food. A perfect 8-inch square, it's just right for baking lasagna and other casseroles, brownies and lemon bars, toad-in-the-hole and fruit cobblers. It will also roast a medium-size salmon or swordfish steak or a small game hen. The heavy-gauge steel promotes even baking and insulates for a shorter cooking time.
