When you purchase it the instructions tell you to use the pan at 25 deg. less then the recipe tells you to. As it is a nice heavyweight metal pan, treat it as you would cast-iron in the oven-bake things at a slightly lower temp, and they'll probably be done a few minutes sooner too!
